Ingredients

  • 2 lbs chorizo sausage
  • 1 large onion
  • 5 cloves garlic
  • 1 jalapeno (optional)
  • 8 medium gold potatoes
  • 3 cups curly kale
  • 10 cups chicken bone broth or stock

Preparation

Brown chorizo in soup pot. Remove sausage from the pot with slotted spoon.

Sauté chopped onion, garlic and jalapeno in Chorizo oil. Add chopped potatoes to the pot. Add chicken bone broth to the pot. Simmer until potatoes are heated.

Add chorizo and kale. Simmer another 10 minutes. Salt to taste.

If desired, add 1 cup heavy cream. For a dairy-free option, add 1 cup rice milk.
