Marianna's Lemon Garlic Italian Dressing

In the south of Italy, we have Cucina Povera, the cooking or kitchen of the poor. Born of a time when poverty gripped the rugged south of Italy, this cuisine took simple ingredients and transformed them into something delicious.

Ingredients

  • 3 cloves of garlic, minced
  • 1 tsp. salt
  • Juice of ½ freshly squeezed lemon
  • Freshly ground black peppercorns or multicolored peppercorns, to taste
  • 1/3 cup extra virgin olive oil

Instructions

Place the minced garlic and salt in a mortar and pestle and mash until it makes a paste. Add the juice of ½ freshly squeezed lemon. Mix with pestle until blended. Add freshly ground pepper. Mix well with a fork. Transfer the mixture to a small jar with a tight fitting lid. Add the extra virgin olive oil, close the lid and shake vigorously. Dress the salad by the spoonful. Mix well until the salad glistens.
