These Danish are the perfect weekend breakfast treat. The tangy mascarpone compliments the tart cherries (that don’t need to be thawed!) To create a delightfully balanced baked good. Using store-bought puff pastry makes it even easier to rise and shine…and enjoy.

Ingredients

SERVINGS: Yields: 8 Danish
  • 1 box frozen puff pastry
  • 4 oz softened mascarpone cheese (cream cheese would also work)
  • ½ cup powdered sugar
  • ½ tsp salt
  • 1 pound pitted, frozen cherries
  • 1 egg + 1 Tbsp water, whisked

Preparation

Prep Time: 10 minutes • Cook Time: 15 – 17 minutes • Total Time: 25 – 27 minutes

Preheat oven to 400 degrees, line two baking sheets with parchment paper and set aside. 

Cut the puff pastry into eight equal pieces and place 1-inch apart on baking sheets. Stir together the mascarpone, powdered sugar and salt. 

Spread 1 Tablespoon mascarpone mixture on each puff pastry square, leaving ½ inch border along the edges. 

Top with a handful of cherries, pressing down slightly. 

Brush edges with egg wash and sprinkle with granulated sugar, if desired. 

Bake in preheated oven for 15 – 17 minutes or until pastries have puffed up and are golden brown.
