HONEY SPELT COOKIES

Ingredients

  • 1½ cup Farm Flavors spelt flour
  • 1 tsp. baking soda
  • ½ tsp. ground cinnamon
  • ½ cup Farm Flavors rolled oats
  • ½ cup Meuer Farm raw honey
  • ½ cup butter
  • 1 farm fresh egg
  • ½ cup raisins
  • ½ cup chocolate chips
  • ½ cup coconut

Instructions

Preheat oven to 325F. Beat butter, honey and egg in a mixer until smooth. In a separate bowl, whisk together flour, baking soda and cinnamon. Add dry mix to mixer and beat until well blended. Add oatmeal, raisins, chocolate chips and coconut. Blend slowly. Spoon the dough (about a tablespoon size) onto an ungreased cookie sheet. Bake for about 15 minutes. Remove to cool. Makes around 12 cookies.
