Burrata Asparagus Salad

Kyle Megna’s girlfriend, Janelle, started her Appleton catering company, Seven-Boutique Catering in 2015 after traveling abroad. In this recipe, she uses fresh ingredients from the market that can easily reflect each season’s bounty. (Burrata is an Italian cheese made from mozzarella and cream) Recipe adapted from I’m Bored, Let’s Go.

Ingredients

  • 2 Balls of Burrata, sliced in half
  • 4 oz. Prosciutto
  • 1 bunch of blanched asparagus, ends trimmed
  • Cherry tomatoes, sliced
  • 1/4 cantaloupe, melon balled
  • Pesto, store bought or homemade
  • 1/2 loaf of sourdough bread, ripped and toasted in oven
  • 2 Eggs, poached

Instructions

Arrange all of the items on a large plate or platter as desired. Top with pesto. Serve
