Chocolate Waffles with Homemade Cinnamon Syrup

Makes 4 large waffles or nine 3-inch round waffles

Ingredients

CHOCOLATE WAFFLES
  • 1½ cups flour
  • ½ cup unsweetened cocoa powder
  • 1/3 cup sugar
  • 2 Tbsp baking powder
  • ¼ tsp salt
  • 2 large eggs, lightly beaten
  • 1¾ cups milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
CINNAMON SYRUP
  • 1½ cups packed brown sugar
  • ½ cup water
  • 1 tsp ground cinnamon
  • ½ tsp vanilla extract

Preparation

In a large mixing bowl, combine flour, cocoa powder, sugar, baking powder and salt. Whisk to blend. Whisk in the eggs, milk, oil and vanilla. Mix until just combined. A few lumps are okay. Let batter rest for 20 minutes. Prepare the cinnamon syrup while batter is resting.

PREPARE THE SYRUP:

In a pot, combine the brown sugar and water. Bring to a boil; then reduce to a simmer. Simmer for 10 to 12 minutes or until reduced to a syrup. Stir in the cinnamon and vanilla.

Preheat the waffle iron according to manufacturer’s directions.

Lightly brush iron with vegetable oil or spray lightly with nonstick food spray. Divide the batter evenly in the waffle iron and cook. Continue with remaining batter. Serve with the cinnamon syrup.

For a gluten-free waffle, substitute gluten-free flour instead of all-purpose flour.
