Roasted Mushrooms

Roasting mushrooms brings out their earthy flavor. Use this recipe to make the mushroom ricotta crostini and the roasted mushroom salad with hazelnuts. Makes two pounds of roasted mushrooms

Ingredients

  • 2 pounds mixed mushrooms, cleaned, trimmed and cut into 1 and 1/2 –in. pieces
  • 2 Tbl extra-virgin olive oil
  • 1/2 tsp coarse sea salt
  • 1/8 tsp ground black pepper
  • 2 tsp fresh thyme leaves or ½ tsp dried thyme leaves
  • 2 cloves of garlic, peeled and finely chopped

Instructions

Preheat oven to 400 degrees. Clean mushrooms with a mushroom brush or a damp paper towel and slice into pieces.

Line a baking pan with foil and spray lightly with non-stick food spray. In a large bowl, combine the mushrooms with the olive oil, sea salt, pepper, chopped garlic and thyme. Place mushrooms in an even layer on the prepared pan.

Place in the preheated oven and roast until mushrooms turn light brown and become slightly crisp around the edges, approximately 12- 14 minutes.
